Nach der Ernte werden die Herzmuscheln in Behltern mit Meerwasser gelagert, um sie auf natrliche Weise vom Sand zu befreien. Nach dem Dmpfen werden die Muscheln aus den Schalen entfernt und noch einmal im warmen, gesalzenen Wasser gesplt und je nach Grsse im eigenen Fond konserviert.
